Although Chef Darren Chin is an award winning chef, he never lets his success limit his creativity in his work. He runs DC Restaurant, a french fine dining restaurant with a strong overlay of Japanese influences. Not long ago, Chef Darren had an idea to open and operate a simple French Bistro with a twist. "Bref" in French means "short", and "brief". The dream for Bref is to share Chef Darren's memories of good and simple food as a quick retreat from real life.
Even from the start of the brainstorming sessions, we knew an open kitchen would be special to feature the intimate process of preparing, cooking and serving the cuisine. In the end, we had a vision for a small space that is clean, efficient and high performance. Throughout the process, we approached each challenge carefully and deliberately; one such challenge was to control the spillage of smell from heavy cooking since it was an open kitchen. In the span of 3 months, we proudly designed an efficient kitchen with a smart design.
