Gen Penang is helmed by Chef Johnson Wong. Gen (Mandarin for "root") holds a profound importance to the chef, who is a champion for locally produced ingredients, while at the same time honouring his Penang roots in his personal interpretation of Malaysian Cuisine. To Chef Wong each ingredient has its own distinct character: "心态料理" is a favourite term he often used. Gen is a passion project for Chef Wong which grew out of respect for locally produced ingredients and the communities who source for them.
Prior to building the kitchen, we spent months understanding and exchanging our visions for the kitchen. Food was the constant subject in discussion, in which its preparation, its work process, the thoughts and insights involved were all brought up and considered. Once a solid concept was finalised and the space allocated, all that remained was bringing the kitchen to life.
